Spinach & Feta Strata prep time 5 minutes, cook time 25 minutes makes 8 servings
Ingredients: 5 large eggs, 1 cup half & half, 1/2 cup Monterey Jack cheese, 1/4 cup feta cheese, 1/4 teaspoon ground nutmeg, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 cup spinach, drained well, and 1 loaf French bread crust removed cut or torn into bite-sized pieces.
Place torn bread into oil sprayed 9-inch baking pan,
Mix well or place in a blender: eggs, half and half, Monterey Jack cheese, feta cheese, nutmeg, salt, and pepper, stir in spinach.
Pour the mixture over the bread, refrigerate for 3 hours making sure bread is soaked with the mixture once the bread has absorbed the liquid cook in preheated 350′ degree oven and bake 25 minutes until golden brown, serve hot. Breakfast done right.
Tip: make tonight and refridgerate
